I would definitely consider Bacchanal at Caesar's to be high end and also very good. It was one of the best buffets I've had. The Sunday brunch at Bally's (Stirling) is also very good. I've heard that the buffet at Wynn is supposed to be great but I haven't been.
Outside of Vegas the Fairmont Resorts do an excellent buffer/Sunday Brunch. My mom worked for Fairmont when I was young and we would frequently go to Brunch at The Palliser and it was great. The same can be said for Banff Springs. I especially like Banff Springs because they usually have a wide variety of game meat. I've seen rabbit, elk, venison, muskox there but I haven't been in about 5 years.

I love Vegas buffets, but when I see these people I start to regret my decision. One time at the Mirage buffet I saw an entire family of absolute mega proportions just going up for plate after plate. It was off putting.
Another time, can't remember which casino, but a table of 6 or so ladies all with walkers and canes because of their obesity just absolutely wolfing down serving after serving.
Also saw Luis Guzman at the same buffet.

i have come across some videos on youtube where the host visits LV buffets. They look delicious.
Unfortunately my wife is a bit of a food snob, so when we have been to LV we have never visited a buffet, not have I ever been to the Earl of Sandwhich; however, I have been to some of the she wanted to go like a Bobby Flay place.
Funny how that works.

We’ve gone to the Aria buffet a few times and I’d say it’s “high end” despite my general hatred of buffets. My wife does enjoy the different options, but for me I just don’t see the value of paying $40 per person for food in a heating tray. They also have an all you can drink mimosas before a certain time of day, but we’ve never given that a go. And yes, you will see the absolute worst of humanity no matter the price of the buffet.

I'm not a fan of buffets anymore. There was a time when I did. Since I smartened up with my food consumption buffets just don't cut it. We had a 2 for 1 coupon for MGM Grand's buffet. I wound up over doing it and feeling uncomfortable for the rest of the night. Then the next year my buddy wanted to try a buffet, so I found another 2 for 1, this time for Mirage, and I controlled how much I ate, but it really wasn't worth the money.
... I know, I know, those two places are not the places you go for amazing buffet food, but I don't think my experience would have been different at Bacchannal or Wynn. Gone are the days of reasonably priced admissions for decent food. You pay way too much for what you can eat these days. The value isn't there and the quality doesn't match the price in most places.

The best part of a quality buffet is the dessert options. I love having lots of options for cakes and pastries and pie, etc.

We used to have a bit of a Vegas problem and one time we got a smoking deal at Monte Carlo that included daily buffet passes. Now, I just railed on buffets earlier, but this was actually kind of nice. One meal per day we didn’t have to plan (or pay!) and could just hop in whenever we felt like it. We had the buffet for breakfast a few days and then as a late lunch a few others. It was nice and of course it was always super quick to get fed.

I'm a Vegas addict too. I go yearly, with desires to go two or three times per year.
One trip I checked what I can get comped and the guy at the desk said I needed to gamble more. A lot more. It wasn't worth his time discounting anything the pennies I earned. I do enough to get decent room offers but due to the pandemic all those offers are dried up and I have no intentions of travelling until we're much farther along and passed all these health safety protocols. So I'll be starting at scratch again when it's time to go.

I went on a nice run at an MGM property playing roulette with their M card or whatever and got a comped night and big discount on the other nights the next time I came. Was great!

Hit up the two hidden bars at Cosmo; Ghost Donkey if you like tequila/mezcal and The Barbershop for other cocktails. Great vibes and upscale atmosphere.

I haven't actually gone but I know Vanderpump in Caesar's Palace is really popular.
