Default Red Beans & Rice

Yeah yeah, I know, mostly entertainment stuff gets posted in here. But, I'm making a new to me recipe of the above, and I know there are a few excellent cooks around these parts, some from the US, where this dish is more often made than up here, and just want a bit of reassurance.

I'm told it's a reasonably "traditional" recipe. I imagine it's going to be fine, but - I oopsed because I was following the recipe on my phone (should have got the laptop out, oh well), and added the green peppers at the start, rather than the last hour. It's just going to make them kind of mushy, right?

(I had a leftover ham/ham hock I needed to use up, so this recipe it was).

They will probably get a softer texture, I doubt it would be full out mushy. You might have a more pronounced pepper taste as well because it will have been simmering for a longer time, but that's probably about it.

Actually eat beans and rice often. Ever since we had a Brazilian exchange student live with us about 5 years ago. The way they make rice is also a big factor on how good beans and rice will taste. Secret is fry onions and rice with more salt than you think you should. And then the side of vinigresh and farofa.
