Lites aren't hard to find, but if you want the full Switch, use sites like nowinstock and make calls. Walmart did have a restock last week that went fast, but hopefully a sign of more restocks coming faster. Same for the other consoles; PS4s have had spotty availability as well - though it seems there's a bunch of non-Pro models available right now.
No goals, just sandbox. I guess you could set one goal of collecting everything in the game, though they'll probably keep adding things as long as people want to play it.

As noted Lite is good if you intend to be handheld exclusive. It still supports nearly all games - the Labo kits are one of the few that are explicitly not supported, while other games (like Mario Party, Ring Fit Adventure, Fitness Boxing) would require a separate pair of joycons.
I have one of each, but I'm still 70-30 handheld-docked, so the regular Switch is still the best option.
The Lite would be a viable second system for an avid traveller and/or someone with a bit of competition for the system at home. I use mine at least 95% docked (or more), but I love the ability to un-dock even if I seldom use it. We are a family of 3 and everyone also enjoys watching, so we're never really fighting over it.

I've been absolutely addicted to Into the Breach the last couple of weeks. I would describe it as a strategy/puzzle game. It can be hard especially when you're still learning the mechanics, but man do you ever feel like a genius when you solve a difficult mission. This video does a really good job explaining the gameplay:
edit: video is of the PC version, but gameplay is exactly the same on switch.

Into the Breach is probably my favorite strategy game ever - I was addicted for weeks last year and I’m not even a big genre fan. It’s absolutely brilliant and a must-play.
