Man, I struggled with this thread title! I suspect in the last 25 years we may have had a thread like this before, but here we go! Looking forward to seeing what gets posted.
I'll start with my absolute favorite REM song, from Document, a great album with iconic songs.

I discovered one of my favourite Stones songs when it was covered by Ace Frehley, of all people. I think I like it because it sounds like it could be done by the Kinks.

Nightswimming is another great REM tune for sure. Jason Isbell has a nice cover of it on his Georgia Blue album.

My favourite Neil Diamond song is Solitary Man. I’d never considered it one of his big hits but it made his greatest hits album. I don’t thing it makes his top 10 or 15 biggest so I’m going with that.

A lot of those aren't really deep cuts, more like well known songs that weren't singles. No Surrender, Under My Thumb and Silver Springs especially. I'd even call Under my Thumb and No Surrender hits.
The Beatles - Dear Prudence, Girl, Fixing A Hole, I’m Only Sleeping
The Hip - Escape Is At Hand For The Travelling Man, It’s a Good Life If You Don’t Weaken
Radiohead - The National Anthem, The Tourist
Sufjan Stevens - Casimir Polaski Day
Fiona Apple - The First Taste
The Smashing Pumpkins - This Time, To Sheila, Here Is No Why
Beck - Go It Alone, Nobody’s Fault But My Own
Counting Crows - Angels of the Silences
Elton John - Birds
John Mayer - Vultures
Pearl Jam - Dissident, Nothingman
REM - Daysleeper, Try Not To Breathe
Rufus Wainwright - Vicious World
