My wife wants to watch this with me but the start of her watching Star Wars is The Mandalorian. She has no interest in the movies but could probably use a little backstory on Obi-Wan and why he's important (that isn't just me explaining it).

He trained Anakin Skywalker. He hoped Anakin would be some kind of saviour, but instead he turned to the dark side. Obi Wan and Anakin got into a fight. Anakin got very badly injured in that fight, and was put into a suit and became Darth Vader.
You could also just read a wiki page up to the end of the prequels.

If you really can't convince her to give the movies a shot just show her clips on YouTube. Show her the Maul fight and do a brief explanation of what's happening, then the Dooku fights, then the big battle in Episode III followed finally by his death in A New Hope.

Sam Jackson was exactly as stiff with a lightsaber as you’d expect a guy in his mid 50’s to be at the time, but I rocked his purple bad motherfr in the Jedi Academy game for a long time.
Tatooine Show 14: Electric Boogaloo aside, I actually am excited for this. but I'm curious about how they'll really be able to generate tension. I know Ben's gonna be just fine at the end, as with the Skywalker homestead. Vader and other prominent imperial leaders are safe too, and anyone else that has ever shown up in OT, ST, R1, Mando, and Boba. so the only characters actually in danger of biting the dust (and probably will) are the inquisitors.

I really think they are just doing what JJ couldn't do. Proper improve, #1 rule say "yes, and..." the prequels exist, they aren't good, but you have to accept, acknowledge and use their canon when writing stories, or you aren't doing star wars, you are just making crappy fan fiction (ala the rise of Skywalker).
Plus Ewan is almost universally the most beloved part of those movies. (maybe Mace as well).
Darth Maul was literally chopped in two and fell down a classic Star Wars bottomless shaft - and he came back. I don’t think it would be any stretch to bring back Mace Windu.
