Something about how citizens are unable to afford New York's pricey rentals due to tourists willing to pay more for an apartment on a nightly basis than what a landlord would get from a renter on a monthly basis.

if you like Chinese food or Dim Sum, NYC has Chinese restaurants that rival those I've been to in Hong Kong, San Fran or Vancouver. Most, if not all are family friendly.
Chinatown Brasserie and Pacificana are two that I remember off the top of my head

From what I understand on TripAdvisor (a good resource to use, especially the forums), there's a huge risk that the city shuts down the apartment due to not following the bylaws so you'll be out a place (and potentially money). You spend so much time and money to get to New York and it would suck if you couldn't enjoy it because of the stress to find a new hotel.
Also, I recommend Shake Shack. It's so flipping good and better than McDonalds.
Four Points by Sheraton Midtown Times Square - $228/night (not bad when all other Starwood hotels are going for $350+)
There's also the Eastgate Tower and Crowne Plaza Times Square which is coming up for less than $300/night.
But they're in Times Sq.
Honestly avoid that place as much as possible. I know that as a local I'm required to hate it, and that tourists seem to like it, but I can't see how anyone would enjoy dealing with that mess every day for a week. I don't mind walking through now and again, it's kind of fun, but more than short term exposure makes me want to kill people.

Art Museums are great there and there are a bunch:
The MET,
MOMA,
The Dia: Beacon (out of NYC, but it's a great train ride up the Hudson River and the town of Beacon is a nice, small town that chicks may like).
Chelsea Galleries: A whole collection of galleries that sell contemporary art and are having exhibitions.
Theatre:
It is truly great in NYC. Probably the best of anywhere in the world except maybe London. Definitely hit up a show. Broadway is obviously a great spot, but there are dozens and dozens of off-Broadway productions that are still very very good.
Sports:
You can seriously watch every sport here. If you are staying in Manhattan then I always find it a pain to go see the Mets out in Queens. The subway always takes me forever.
Food:
Lots of good restaurants. If you want to keep costs down and just grab lunch somewhere hit up supermarkets which are all over Manhattan and elsewhere. Lots of them sell cheap lunch and have really good buffet's, etc. One different food place that I always love to hit up when in NYC is Amy Ruth's Chicken and Waffles. There is one in Harlem that is pretty good. Harlem is also pretty cool just to look around and check it out.
I would check out restaurant.com. CAn get some pretty good suggestions and discounts there. Just cross-reference the coupouns with urban spoon. I did that before I left. Not only did I get some great ideas for restaurants but it forced me to check out different areas of Manhattan.

If you're into galleries check out DUMBO in Brooklyn. A lot of new event/gallery spaces. The Creators Project was there last month and had some really cool stuff, including a video project by David Bowie.

I'm more interested in the soup/sandwich, as opposed to the "experience".
If you like pastrami, you will most likely love it. The massive portion of pastrami they give you made me overdose on it to the point where I've never felt the urge to go back even after 9 years (although personally I'm not big on rye bread sandwiches), but if you're into that type of sandwich I'm sure it will hit the spot.
And just for you, there's also a great rooftop Lenin statue roughly across the street!

There are a few places that people have their divided loyalties too. I like Katz's but admittedly haven't been to many others. Carnegie Deli was good, and is also close to the hotel you mentioned at the start. Mile End in Brooklyn is actually a Montreal style deli and is delicious, I've only had it catered so I imagine it's even better fresh.

I guess I'll try to hit them all, since we'll be there 7-9 days. It's not like anyone will want a brat in a Michelin restaurant, so we'll have to stick to delis, pizza and Chinese.

Don't forget the street meat and dirty water hot dogs
I'd also try an Indian restaurant if I were you. NY probably has the best Indian food outside of London (and I presume India). They tend to be really cheap and awesome... especially compared to the sub-par Calgary Indian I remember.
