Lots of waste to trim however, so you’ll pay for about 5-6lbs of wasted fat to trim off.
It’s almost always worth going to a butcher (mastermeats is a good one) and just ask them to trim it up for smoking, you end up paying the same if not lower and it’s higher quality beef.

I usually get my pork shoulders and beef briskets at butcher in Strathmore. Call them the day before, pick up next day. Usually about $10/kg and great quality. He will trim any way you ask. Bit of a drive for Calgary folks but i am in Chestermere so less of a concern.

To smokers, regarding that powder that collect in the bag of wood chips, can that go into the hopper or should I sift it out for disposal?

If you're talking about a pellet smoker, the powder will gum up the auger.
It's best to just throw it out.

That’s what I’ve been doing. Is there an easier way to collect the pellets and than hand sifting the powder out?
How often do people clean out the burner and the barrel? My Traeger was losing heat yesterday so I went in and cleaned it. It had been cleaned two smoking sessions ago, but the last one was a long beef smoke.

Do you have a fire pit with a grate? That's what I use. Dump pellets on the grate and let the dust fall down. Any pellets that fall through become firewood.
Edit: I clean my traegar probably 5 times a year. My smokestack is getting gross though, gotta give that a good once over.

I’m fairly new to this.
I have the Traeger Pro 780 pictured here with the hopper at the end. https://www.traegergrills.com/pellet-grills/pro
The pellets are pulled through by an auger. I don’t know if the dust goes through or if any dust that might get into the auger is harmful. I’ll empty the hopper to see if dust is collecting at the bottom. I’ve been hand sifting out some of the dust but don’t know if that’s necessary. I don’t see any dust in the burn pot.

What about buying a decent sized metal strainers with handles to use as a scoop? You can shake it a few times before throwing the pellets in. I can't imagine it being much worse than $5 or so?

I use a $1 cat litter scoop from Dollarama, works great.

There is some kind of interlock. I had a problem where I opened the tank when the burners were already open and it locked the tank up tighter than a drum. I forget what I did to get it working again but it wasn't as simple as shutting down and starting again.

My only thoughts about those scoops is that they're a little small at times, but if the size works for you, then this isn't a problem.

Where’d you get it, and how much?
I’m guessing Brandt Lake, last I looked it was about $225 for a 17lb brisket.
Upload some pics! I’ve wanted to do a Waygu brisket for a while.
