Ditto on the opinion of Dark Table. Interesting concept and once upon a time, they had a chef that was worth the visit with its blind tasting concept
Truth of the matter is that Calgary is too small of a city to host a lot of these niche type restaurants. You'd find way more of these in the biggest cities in the world (NYC, Tokyo, LA) and major touristy cities (Las Vegas and Niagara Falls)
For what we have here in Calgary, I'd recommend Japanese village or OMO or Tobe. Three restaurants that do Teppanyaki where you sit around a grill and a chef cooks the food in front of you while cracking jokes and pulling tricks like juggling his knife and serving forks, tossing pieces of broccoli for you to catch them in your mouth, onion volcanos and grease fireballs

I’d suggest a coffee shop once it has been over run by loitering teens
Have your group tried Ethiopian Food. It is really good and very different from western cuisine. A few good spots on 17th that very in formality.

Theres that restaurant where you make your own pizza, it sounds kinda of fun but I never caught the name of it. They give you the dough and you pound it, you mash it, you spin in it up in the air. You spread your sauce, sprinkle the cheese and you slide it into the oven, and don't worry about the over being 600 degrees, its all supervised!!!
Also here; For a party of 8, ask for a spot in the basement.

If you like this then check out the Casbah restaurant. This place does the hand wash and you get your own room. It celebrates Moroccan cuisine. You can choose off the menu or you can do a full on tasting experience.
I highly recommend this one.

Any kind of restaurant where you get top notch ventilation around you. Covid, flu and colds. Knowing that your party will be receive fresh ventilated outside air while enjoying their dining experience will be a for sure draw.
Imagine a group looking to dine and let's say at mid grade restaurant like White Spot offers better viral protection over a higher grade one. While the food might be acceptable but the risk is less, I think the less riskier restaurant wins out.

People barely care if a restaurant is shut down due to a rodent infestation, there's just no way that is going to end up being a differentiating factor.

I really love the Grizzly House, but don't go there without knowing that you're absolutely going to have to shower after, and don't plan on wearing the same clothes the next day (jackets included) until they can all be thoroughly washed. I always leave that place feeling like I have a huge layer of grease on me but it's always fun and delicious.

I agree that it is an experience, but one I won't be wanting to go through again.
Food was OK to below average, the service was really poor (though to be fair our girl was great but she was also alone as the other server was unable to get to work which made a long turnaround twice as long) and the heightened senses because of loss of visual worked against the whole idea for me.
The premise is a great one and may work well for many people, but i was getting so anxious after sitting for almost 2 hours we left before the 3rd course (dessert) was even served.
We did leave 50 bucks for the server because she really was on an island and was wonderful when she was attending to us, but beyond that i simply could not recommend it.
Oh and when Jiri says pitch black, he is not exaggerating. You can put your hand an inch in front of your face and see absolutely nothing.

This is getting a bit far away, but the Patricia Hotel (near Dinosaur Provincial Park north of Brooks) has a "cook your own beef/bison" offer. Good quality steaks in an old-timey Western saloon type environment. They have a big commercial grill with flame hood in the restaurant. They also serve other stuff (chili, burgers, beer, etc) but I probably wouldn't bother unless you're doing the whole experience. I had a boss who loved it and we went a bunch of times when we were in the area for work. It was a good group of guys and work paid so it was always a lot of fun.

Right? If I want to work there, do they blind me? If yes, how? Hot poker? Stare directly at an eclipse? Surgically detach retinas?
And what about hiring discrimination? I’m not allowed to work there if I’m not blind? Or can I just wear 2x eye patches or something? How do even know I’m blind? Medical records? That sounds like a privacy violation.
