Fuel is the issue. I half watched a video a few weeks ago about supersonic jets (Wendover Productions or Half as Interesting, it was a Sam video). I don't remember what he said about fuel consumption on these new concepts.
The "all business class" model is also a tricky one. Do-able but tricky.
The routes would be very limited and you might see it follow the same path as the A380. Not enough routes to make it worth while over the long term.

It was this video, and I think I remember him saying it was about needing a new type of engine to be fuel efficient enough for the concept to work?

Why not I guess. I meant it's not like they don't have any surplus aircraft right now. Will cost them pretty much zero in crewing costs with the pilot surplus (assuming it still exists).

Word is they will be leasing these birds, not pulling them from the existing fleet.
I see we are also getting the nightly Griffon helicopter doing the Canadian flag flyby of the Grandstand. It usually buzzes over the Bow by my place so it provides a nice sight and sound every evening during Stampede.
