Speaking of restaurant recommendations, is The Clubhouse Korean Restaurant in Bowness any good? I've driven past there a number of times recently and it looks like a dive but I'd be willing to try it if the food is good.

yeah... the ones that are sold as whole/half cabbage, rather than the cut ones. it's easier and cheaper to cut the cabbage first, but the taste just isn't the same

restaurant kimchi isn't usually that great... but sura on 2320 4th st nw tends to have the best kimchi and homemade style side dishes, I've found.

Also sounds like an Asian version of many Eastern European dishes that are cabbage based. Not to say was adapted from, kimchi was probably around longer, just saying sounds similar to.
It's hard to explain what it is. Kind of like a side condiment, like a pickle would be considered. You wouldn't really dine on just kimchi alone, unless you were really into it.

I bought some at Save-on. I had no idea what it was but have seen enough Top Chefs to know it is an ingredient I need when playing fine dinning chef at home.

Now that we all have our kimchi, what the fata do we do with it?
