Being serious for a sec, teach her how to fall as one of the first things. That way she won't hurt herself as easily when she inevitably falls. Even people who skate well will fall (ie: Figure skaters).
Then after teaching her that, you say, "But I won't let you fall".

Just make sure she is into it and it isn't more for you that she learns to skate. Learning to skate can be torture for an adult if they really aren't into it. It can be kind of like making a date go to the gym with you. Some people might want to try it out, but it is a lot of hard work and can come with a lot of pain.
I find people who didn't grow up with skating think it is easier than it really is.

I would avoid outdoor rinks. The ice just isn't as good as, say, the Olympic oval. Every little nick on the ice outdoors will trip a newbie up.

"teach me to skate" is just an excuse to do a wintery romantic activity where you might hold her hands or grab the small of her back and whisk her about and lead her around
all the girls I've taken skating who asked me to "teach them" never had interest in actually learning when we went , even though I thought the first couple times that that's what they wanted . not once
I hope you don't think you actually need to transform into a certified skating instructor before then to convince this girl to like you . you don't
don't try so hard , don't stress . be yourself and joke and have fun with her being not good at it .. give her every excuse to cling on to your arm or hand
and go out long enough to get cold enough to cozy up by the fire or in the car later
come on fellas .... this doesn't have to be some herculean effort just to have a fun night outdoors
and if a girl actually expects you to win her favor by becoming this amazing teacher that can transform her into a figure skater overnight then she is not worth it lol

Plus, she never, it appears, asked to be taught to skate, this is just some iniative by the OP to speed up the trip around the basepaths under the auspices of learning to skate.

haven't had many successful skate dates, I see
this is the vocabulary of someone who has been there and done that more than a few times . just trying to help out the poster by giving some unadulterated advice so he doesn't screw the pooch with all this unnecessary effort
yes I realize I talk like an old timer .. but the wisdom is sound , I assure you
he wants this to be a date after all , not lessons with her platonic Canadian friend
