Will definitely be tuning in.
Seems only natural to conclude the series with Saul getting a call from Jesse to solve the first of the many problems him and Walt had to deal with.

Supposedly it's going to be a prequel series.
Sure hope Bill Burr is in it! Maybe the guy who plays Huell will be too.
EDIT: Ooops, see that's already been discussed. What the heck is a prequel sequel hybrid?

I know, and it would be pretty cool to see it end just as his involvement in Heisenberg Enterprises begins. Although now that I'm hearing they want it to be its own show with minimal association with Breaking Bad I would bet the finale avoids a nod to the series.

From everything I've gathered, Gilligan is only going to help get everything off the ground with AMC and set it on its way. He sounds pretty focused on his new show Battle Creek.

I would think something similar to the narrative style of Lost (and other shows that have followed Lost, like Person of Interest and Revolution).
In that style of show, you have a central "event" (the plane crash on Lost, the starting of "The Machine" on PoI, the global power outage on Revolution), and the "A" plot of each episode takes place after the event and tells a linear story of the characters dealing with the aftermath of the event. There's also the "B" plot of the episodes, which is told in flashbacks and provides background information on the characters that ties in with things happening in the "A" storyline.
The advantage of doing a storyline like that is that they're not constrained to a specific narrative that everyone knows where the end game is. If it was a straight prequel, it would basically be: the pilot shows Saul buying his first billboard, and the finale has Walt walking into Saul's office for the first time, and the entire series would be about getting from point A to point B.

Jonathan Banks has signed on to reprise his role in the spin-off.

I saw a news article on IGN i think that Aaron Paul wasn't going to be in this. Or are they just putting up a smoke screen?

Based on the style of the show as described I wouldn't have thought Aaron/Jessie would have been in it anyway, so if they are saying he isn't, I would probably go with that.
Like has been teased with Cranston though, I could see him making the odd appearance. But I don't see him as a regular or even guest regular.

I don't know quite how I feel about Breaking Bad characters outside of Saul's group showing up. If it happens I really hope it's just a subtle nod to the series (running into Jesse/Walt on the street or something).

I think it will be brilliant. We will see him dealing with some serious issue then out of nowhere Walt comes in all Heisenberg and messes everything up and is gone next scene. It reminds me of the Netflix Arrested Development where you got to see what each character was doing from their perspective and other perspectives.

Agreed, it's really easy to overdo things like that.
Though I do want to see Mike, Patrick 'Kuby', (Bill Burr) and Huell as main/semi-main characters.
