Fast forward 50 years and the earth is part of the Ko-Dan empire and the people of earth are oppressed. Main character is Alex Rogan, named after her grandfather who fought the Ko-Dan as a teen. Alex is an outcast because everyone believes her grandfather betrayed humanity through some convenient plot device, but she's convinced he didn't.
Through something that belonged to him she discovers a hidden cave containing a copy of the original game Starfighter.
Thinking it's a game she plays, and is really good at it (she of course inherited the gift). Upon defeating the game a vast cavern is revealed containing the ancient Gunstar.
Living in the Gunstar is a damaged AI that was installed after the events of the movie. As the AI repairs itself with the help of Alex it helps Alex and her friends train as pilots.
Maybe make them discover a human resistance hiding that has been building weapons and ships to resist but hasn't been able to find anyone with The Gift and haven't been able to build a Gunstar. When she finds them they try and take the Gunstar from her, but she somehow shows that only her with The Gift can defeat the enemy effectively. Eventually they accept her and they build other ships based on the Gunstar that are more effective, but Alex and the Gunstar are the main fighters.
Then maybe have them discover more Gunstars and then there's more pilots. Lots of teen drama and character growth etc.
End of season 1 is the first win against the empire in a battle.
End of season 2 is humanity losing the war but Alex escaping the solar system to track down a signal that might indicate another planet that can help

There is a twist here and the twist is that they see the show as ideal family-friendly programming for Disney+. My source tells me they’re planning to target it more at a PG-adventure, family audience and less at the sort of PG-13 dynamic the original Joss Whedon show went for. This shift in tone suggests the new version of Firefly might drop characters like Inara, who is basically a prostitute. Instead it’ll probably lean more into the fun and adventure aspect of the universe’s stories. Fans may initially be unhappy, but it’s easy to see a way it could work.

That show was easily one of the cheesiest and most terrible I've ever seen. I suppose a reboot would be good because they could actually do effects now instead of just doing slow motion with weird noises.

They tried to do a bionic woman reboot it was bad.
The only way I'd watch a million dollar man show is if it starred Stone Cold Steve Austin and he bionically stunnered Sasquatch into orbit.

Odyssey 5 (A shuttle crew, when after a global extinction event they are thrust back into their bodies five years in the past. The original starred Peter Weller, chewing the scenery.)
Vampire the Masquerade (Different tribes of vampires, every historical trope, working together to hide and exploit humanity. Basically 1930s style gangster vibe with underlying cold war spy themes. With vampires. The original was a little too soapy instead of crime thriller, but a tonne of material to work with.)
Newsroom (Canadian Comedic Version from Ken Finkleman. Gervais Office level of writing, dry and no laugh track. Went on to make Made in Canada.)
Highlander (darken the tone - take it back to a planned series where at the end there is only one)

100% yes, I wouldn't pickup the same story though. So Much potential to do 2-3 season story arcs through the eyes of common soldiers that Forest Gump their way through high society. They could run that thing for another 10-15 years easy.
