Default Vegetarian diet. Where do I start.

I tried a search on here, but couldn't find anything. I'm wanting to become a vegetarian but I don't really know where to start in order to get all the nutrients that I would require.

I tried once before but ended up feeling completely drained and ill, but I assume that's because of too little protein.

Does anyone have any recommendations or recipes? Any help would be awesome.

Start by slow roasting your vegetarian over a charcoal fire. I like to use hickory chips to give it a natural smokey flavour. As with all good bbq, the key is the spice rub.

Two of the things you really have to watch out are iron and protein intake. They are much more difficult to get from vegetarian food.
Some good food for this:
Black Beans, Pumpkin Seeds, Spinach (and dark green vegetables for iron), Tofu and anything like veggie burgers, veggie sausages.
The worst thing you can do is just remove the meat from normal food you would eat without making any changes.. it probably won't be a really balanced diet.

I learned all of my vegan and vegetarian cooking from two people who were raised as such since birth. Neither had ever eaten meat (or cheese or dairy in the vegan's case) and they were healthy and well nourished people.

The biggest things they taught me was use of tofu (there is a difference in types and how to prepare it), nuts and whole grains. And that you don't try to emulate "meat" foods because you will fail and be disappointing. There are plenty of vegetarian and vegan foods that are delicious in their own right and will give you the iron and protein that you would have gotten from other sources.

I don't have a hate on for meat, just would prefer to eat healthier in general and don't want to rely on solely on eating meat for protein.

Basically, I'm wanting to incorporate things slowly over time instead of completely revamping things all at once and I figured that maybe there might be some others on here that might be going through the same thing, or have gone through the change recently.

Actually, I'm doing this because heart issues run rampant in my family and I know that vegetarian diets help reduce the risk. I'd prefer to not die at 45-50, so I'm trying to take some preventative measures instead.

I recently watched Sanjay Gupta's report with Bill Clinton and they were saying that removing dairy and meat from the diet can vastly improve your heart health, and reduce the risk of heart attacks to virtually 0 even with a family history. So I figure it's worth it for me to give it a shot.

I'd prefer to avoid tofu altogether as I have the same opinion of it as you do.

I'd rather eat other things like peanut butter or almonds instead to get the necessary protein, but don't have any idea if that's feasible or not though.

Pretty sure Caged Great didn't mention tofu yet. You CAN eat vegetarian without tofu.

if heart issues run rampant in your family, you should see a doctor and let him know that....
load up on your B vitamins if you are heading to the bottom of the food chain.

I remember the telephone call when I told my mother that her granddaughter was a vegetarian, it took 6 'what, not even chicken?' before the full horror sank in to her.

On a practical note learn to eat and cook east indian, bhalti especially, about the only tolarable vegetarian food in the world, and if you are doing this for your health then continue to eat fish, it is very heart healthy and gives you much of your protein needs.

I have been vegetarian for 21 years now. The person who said that protein and iron are the things to watch was bang-on. I'd also include B vitamins, especially B12.

On the iron side of things, the one carb I still eat is breakfast cereal three times a week. Many of them, like Special K, are heavily fortified with iron.

The Yves cuisine meat alternatives have all 3 - protein, iron and B-complex. And, yes, I eat more spinach than Popeye.

I do eat far less protein than most, so I don't have the muscles of the aforementioned sailor-man, BUT as of my last physical, my doctor said that if they gave gold stars for health, I'd get one. All of my blood tests came back normal or better than normal with extremely low cholesterol levels.
