Moncton? Ewww. Only exciting thing there is the tidal bore if you time it right. If you do happen to head up that way Joggins is a neat stop. It's a fossil bed in the cliff in the Bay of Fundy, so you have to time your visit for low tide to access it.

PEI in May isn't terribly exciting, and it's about 4 hours drive from Halifax so a day trip probably isn't worth it if you've only got the week.
PEI National Park is gorgeous, though. And the Canadian Potato Museum in O'Leary opens for the season on May 15!

Army Museum Halifax Citadel is great to see
also, the Alexander Keith's Brewery tour is excellent, it's more of a peek back in the history of the company and the man rather than just the standard brewery tour of look at our giant beer fermentation vat

I only occasionally make it down to Halifax, but here are some of my regular stops while I'm there:
Halifax Seaport
Public Gardens on Spring Garden Road
The Halifax Public Library is beautiful
If you are a beer drinker, there are quite a few little craft breweries in the downtown, including the Garrison Brewery at the end of the Seaport. There are also a couple of beer gardens down along the harbour (don't know if they'll be open yet), and the boardwalk itself is pretty nice with a bunch of restaurants and shops and nice views, though it'll likely still be a bit chilly the first week of May.

As noted above the Maritime Museum of try Atlantic.
If you're there on a weekend the Farmers Market on the waterfront is pretty neat.
Halifax Public Gardens are pretty, not huge but nice.
In terms of eating Your Father's Moustache is my favourite pub food. It's not greasy like typical pub food and the waitresses are super hot (not to mention really good at their jobs, service there is top notch). This is located on Spring Garden Road, sit on the patio!
Chives consistently has the best ranked chef in the city. The chefs/owners also opened a more lunch style resturant two doors down called "Two Doors Down" both are on Barrington Street.
The patios on Argyle are awesome (there is construction across the street of the new convention centre but don't let that deter you.
If you're venturing outside the downtown core (or the penninsula as the locals will call it) Kartbaun in Baters Lake is a lot of fun. Golfing at Glen Arbour is from what I'm told the best place to enjoy 18 holes.
Take a harbour cruise. They're relaxing and you see the city from a whole new perspective. There are tons in the boardwalk from the Harbour Hopper which tours the downtown in their weird boat on wheels and then "hops" into the harbour and tours from the water; to a Theadore Tugboat replica that gives a tour. If money and time is tight just cross on the Dartmouth ferry and back.
There are several brewery tours available (Alexander Keith's, Garrison, Propeller).

Lastly, wings at Oasis are good, when I go I order them with HalifaxDrunk so is recommend eating them like that. T

I'm considering it so that I can basically just say that I've stepped foot in Nova Scotia, PEI and New Brunswick once in my life.
I don't mind a single day where I just crush off mundane checklist items. I'm trying to find the balance between places I should basically power walk through and leave vs other places I should spend more time.

If you go to PEI, I'd recommend at least spending a night. Maybe you could do it at the end of your trip, since the Halifax airport is halfway there anyway(only kinda joking).

Pier 51. Check and see if your ancestors/relatives came in on any of the boats from the Atlantic! They have the records if they did.
Also, Edna is a great restaurant.

Holy Crap, that's a great review... I have zero memory of doing that!
I'll add 2 Crows Breing on Brunswick as a great place to get a beer.
Check out the library, it's a really neat place.
Spring Garden Road has been completely redone, walk up from downtown to the Halifax Commons.
But as bc-chris reccomended, leave, come to Cape Breton!
