OH MY GOD.... How I have I not seen this thread before? Thankfully it's Stampede week because I just spent the last day and half reading this thing and wow... just wow. So many thoughts running through my head right now. Talk about epic!

It's not expected that guests tip at all at hosted parties. If you do, the servers are getting double tipped, since the host always gets charged a gratuity on the total tab. You tip on what you pay.

You mean the catering company actually pays the two bartenders and one server their 15% gratuity on a $10,000 buffet?
In all honesty the tip they get (at least how it works here) is peanuts compared to what they'd get if it was a cash bar/paying for their own meals.

Don't they have to by law.
I thought that managers and owners weren't allowed to touch the tip out unless they were physically involved in the service. Wasn't there a case where the Starbucks employees sued because the manager was taking a portion of the tip jar?

Might be different in Alberta, but here in NS if you go to somewhere like the hotels or convention centres and say you get a meal for 250 at $24.99/plate you're charged 15% HST and 15% Gratuity.
The servers don't split $937.13. My brother used to bartend at one of the convention centres and he loathed open bar because no one tipped (because the host took care of it right?) and then they wouldn't see their fare share of the gratuity (which should be say 2 kitchen staff, 5 servers, and 2 bartenders $104.13/each).
But that sort of thing is regulated provincially so maybe it is different
