Sackboy: A Big Adventure is a must. My kids were addicted to that game for a long time, and it's right up there with any given Mario game as one of the best 3D platformers of all-time. Here's some others that I've gotten a lot of play time with as well
Spyro Reignited Trilogy
Crash Bandicoot N-Sane Trilogy
Sonic Mania
A Hat In Time
Untitled Goose Game
The Ratchet & Clank games are awesome as well (PS4 remake/reboot and PS5 Rift Apart), but they're probably too difficult for them to play. My kids enjoyed watching me play them though

I have two boys (11 and 7).
They love basically all the LEGO games, but especially the Marvel ones. The newest one (Star Wars: Skywalker Saga) was also a hit with them. My boys started gaming on the LEGO games. They're quite good for the little guys, and they still like them now that they are older.
I'd also really recommend Sackboy. Me, my wife and my kids all played it four-player and we loved it.
The other games in our house that my boys love are: "Stick Fight" and another called "Gang Beasts". They are fighting games with pretty funny physics and my boys get a major kick out of them. They can also be found for very cheap.
Ratchet and Clank is also good. It's only single player but my boys enjoyed watching it, and we'd take turns on different levels.
Do you have PS5? Because the game that comes with it (Astro Bot) was also a major hit with my kids. It's single player again, but they took turns and loved going through and collecting everything.

Yeah, we got tons of mileage out of the preloaded Astro's Playroom. My kids loved it before we moved onto Rayman. Now we are on the hunt for something new.

Sackboy is PS4/PS5, and it's on sale for $26 on the digital store right now. Great deal for that game, I'd also recommend it.
My kids play a buttload of Playstation, here's what's got the most playtime the last little while:
Slime Rancher (we've had this for a while, it just clicked for my 5 year old over Christmas break here)
Deeeer Simulator
Goat Simulator 3
Fall Guys
Spongebob Squarepants: Battle for Bikini Bottom
Minecraft
Astro's Playroom
Bugsnax (this one was huge with my 5 year old)
Dreams
My guys are more into open-world / explore around and do whatever you want type games, they tend to get bored in the more traditional platformers so their taste might not line up with your kids.

Sackboy is the newest game and it has a PS5 version. You may be thinking of LittleBigPlanet 3, which was the PS3 game

My 7 year old girl and I love playing Goat Simulator 3 together. As mentioned, Astro's Playroom is really good for any age.
