I get jelly of my buds who have the ability to set it and forget it.

I have an older model Traeger that I am very happy with. I wish it had features that newer models have. I don’t have any experience with pit boss but I have to say I really like the idea of being able to sear meat on it. Especially if it will be you only grill. I currently have a smoker and a bbq, if your smoker will replace your bbq I would strongly consider the pit boss for that option alone.

Thinking about replacing my bbq with an end of season sale, what are some good brands to look at in the $500-$1200 range? Would like natural gas, with a side burner.

Are you using the trays they give you? They don't hold enough charcoal.

I've tried both methods. Trays and no trays.

I think I'm simply not adding enough charcoal. I think the next time I do pulled pork, I'll fill up at least half the bbq with coal and give that a whirl. I guess I've always been too scared to get the temp too hot so I didn't add enough.

I still like the idea of getting the pellet smoker though. It is very appealing and basically idiot proof.

A Weber chimney starter holds way more charcoal than the two trays. That's what I use.

So I went to a BBQ on the weekend and my friend, who was doing the BBQing, was cooking pork skewers. He was cooking the pork until the internal temp was about 180F. It was like eating one of those Mars rubber erasers. How can I help him improve his BBQ game so we can enjoy the food and not just munch on potato chips the whole time?

How many burners? You can probably get a Weber Genesis 3 burner + side burner at the higher end of that range.

3 looks like the same size overall as my current 4, so don't want to go much bigger. I was looking at the Weber, the previous gen version looks to be on sale in that range, but of course not available anywhere. With the new version replacing it, I'm not sure the new one will go on a clearance sale, but who knows.

I bit the bullet and went to Barbecues Galore.

Kinda wanted a Napoleon but the prestige series is Uber expensive.

Is that Rouge better than the Webber?

Can you use the infrared sear zone as a normal side burner? We don't have A/C, so I use the side burner quite a bit in the summer.

Which Weber? Cheapest NG Genesis starts at $1350. Genesis II is their older model that really isn't worth the money unless you can get one at a significant discount.

The side burner uses an infrared heating element, you use it like any other side burner.
