I haven't found any enthralling RPG's yet. The platform doesn't seem condusive to RPG's... I did play a bit of FF1, but only made it 30 minutes into the game before I got bored. Plus I don't like the contols... too bad you can't connect one of them original NES rectangular controllers to the iPad.
What I have played and enjoyed were "Puzzle Quest" and "Puzzle Quest 2" as the bejeweled-esque battle system DOES lend itself to the iPad format. Originally, PQ2 was terrible as the port was rushed to market and I couldn't put up with the crashing and the horrible speed, but they have made some tweaks and while still slow, it didn't crash very often.
I'm looking forward to my 2nd favorite game ever (Final Fantasy Tactics) coming out for the iPad soon, but in the meantime I have been playing "Rebirth of Fortune" and "Sorcorer of Fortune", two strategy RPGs similar to Tactics, except that they are completely linear and there is no story. Just level after level. It passes the time. What I like about it is that unlike Tactics where you build up Ramza to be a Knight / Black Mage, in the Fortune series you are given X number of points for the level and you can choose to add a Knight which uses 5 points or a Soldier which uses 2 points. So if the computer has mostly magic users, I fill the board with Ninjas and rush in. If the computer has mostly brute force monsters, I put a line of knights in front of some magic casters and let the Knights fend off the monsters while the protected magic users throw fireballs for massive damage. I'm not forced to use Ramza the Knight/Black Mage every battle.
Battleheart is a cute little RPG... played it for a few days... got bored. But it got more use than any of the FF games.

I said above that FFT was my 2nd favorite game ever... all time it would have to be the Baldur's Gate series, but I haven't found anything anywhere near that style/level of quality on the iPad.
I have heard really great things about "Across Age" and if you liked the Link series of games, you will likely enjoy "Across Age". However you are limited to two characters - a warrior and a magic user. I prefer games where you have a party of characters - give me monks, rogues, paladins, clerics, wizards, etc and I'm a happy camper.
