Cersei has said several things to suggest she doesn't care about her children as much as she says to everyone.
When she last saw Jaime, she basically said nobody else matters. 'Nothing else matters, only our love'. She didn't include Tommen in this circle of love. At this point she already accepted that Tommen was going to die as per the prophecy.
If she truly loved her children, then she wouldn't have blown up her last remaining child's wife whom he really loved. In the religious sept where Tommen worshiped his newly found gods. This was a selfish choice that would only have a positive result for Cersei.
If Cersei didn't restrict Tommen from entering the sept, she would of been seen as the murderer of the king. Everyone knows that it was the queen who pulled the trigger on this. It was more to save her own ass then to protect her son.
I didn't say Cersei was smart, or not selfish I said she loves her children more then anything, including her love of her goals. Selfish people can love their children more then themselves and still not think clearly about situations and put themselves first.
To counter your points:
-Her words with Jamie, honestly, I think you are reading to much into one conversation of a greaving mother who felt lost.
-Tommen loosing his wife - she thought Margrey was putting her nails into Tommen and hurting him, she thought her dying was best for him. Short term pain for long term health.
-Saving the life of her son doesn't mean she did it for selfish reasons, it proves nothing. She saved his life, you can't say that proves she doesn't love her son in any shape or form.
Cerci is dumb, plain and simple. Her whole plot of blowing everyone up wasn't the hardest plan to think up once you know there is gasoline stored underneath the Sept and have a great deal of help.
But she loves her kids. The show loves grey characters, her one good quality is her blind love for her kids.
Hell, even the high sparrow stated pretty much this.

He's not my favorite character but him winning the game of thrones would be a sucker punch for the ages. There's no way it ends up with Jon or Dany on the throne IMO. That would be too perfect and what everyone would want. Maybe one of them gets it for a bit, or maybe they both do, but I doubt that's how it is when the final credits roll.

I think either Danny wins the entire game and walks away (I don't want to be a spoke in the wheel, I want to break the wheel) or all the claims to the throne are killed during the war with the white walkers, leaving a new system of government (democracy perhaps).
