I think he’s meant to be a bit awkward and seem weak. He’s just a nerd wanting to play with his model cities and dragons.
I also got the impression that his flat demeanour was supposed to be partly due to his poor health and also some kind of mental illness building up. It's likely that some Targaryen kings get consumed by their visions, or it could just be general Targeryen madness creeping in.
Physically, having your fingers rot off seems like a pretty big deal, but Viserys seems to totally ignore the problem. Viserys seems to want to avoid conflict so much that he won't properly look after his own physical ailments.
The chemistry between these two is off the charts.
Not just their chemistry but they both have that “could be a child of incest” kind of look/facial structure that is required to convincingly play a Targaryen.

What were we supposed to take as the reason for Daemon stopping? Conscience, impotence, gay? He hasn't had any children yet, and seemed to have sex issues earlier of some kind with the whore girl. One recap I read said it was his conscience, but that didn't really seem to fit.

I thought maybe he was really into his new wife, Mysaria. I kind of got Melisandre vibes from her, and thought she was more than a lover, maybe giving him direction politically.

Daemon losses his boner when Rhaenyra starts getting into it and aggressive back. He acts strange when she goes to kiss him and just isn't into it when he realizes she is more than just a victim.
