I've been eating a lot of hard boiled eggs recently. I am starting to prefer that to eating over easy, or scrambled or something.

I would prefer to eat them scrambled, if it wasn't such a task to make them.
Either way, as a quick, cheap way to get protein....eggs are awesome.

How many do you eat per day? Cholesterol wise, or whatever else "bad" might be in eggs, is it OK to generally eat two per day?

If you're concerned, get yourself checked.
I'm eating anywhere from 5-15 per day.
Depending on what other meals I have.
Read Michael Pollan's books, and then come back and tell me that dietary cholesterol is harmful.
He concludes that there is no science to prove the idea in the first place, much like there is no science to say that fats were bad for us.

Do you read the Crossfit Forums?
There are people on there that have been eating 12 eggs per day for a few years now, and none of them has had any kind of problem health wise.
If anything, their HDL has increased, and their LDL has gone down.

Its probably my best source of fitness information these days.
A bunch of us are doing the paleo diet, or trying at least. Under the nutritional section you should find our thread.
I'm only going with it for 30 days or so before I'll go back to eating a few more carbs.
Its fun though.....to challenge yourself constantly to find other foods to eat. Goes without saying that you see very obvious results too.
And part of the diet is eating a lot of eggs.

Good stuff. I'll have to browse around a little more there, I really haven't explored too much. I have a fitness test tomorrow morning, and I've got crossfit to thank for getting me ready for it.

You know what's really good? Soft boiled eggs with anchovy butter! (technically, soft boiled eggs present a salmonella risk. Pffft!)
You boil an egg for 3-4 minutes so it is still slightly soft. While that is happening, mix an anchovy up with pepper and about a teaspoon of softened butter or so. Then, crack the top off the egg off and let the butter fall inside. Eat it by spooning it out. You get a wonderful salty, buttery flavor with the richness of the egg.
