Well, that's an easy one.

Transporter chief will keep trying to get a lock on them. Then the Enterprise fires the photon torpedo, which destroys the Jenolan from the outside in. Meaning that at some point the shields were destroyed, but the hull was still intact. By getting a lock at that very millisecond they were able to beam them off.

Because as we all know- as long as you get a lock before the ship explodes, the people you are beaming up will survive.

They can't ship that outside the US. And what are you supposed to do about food? Flies are sparse in Calgary Winters and the typical office.
