Why do player wait so long nowadays to pass on 2-on-1s.. pass it back and forth to confuse the defender. Wait to long and the defender only has to block 1 pass.

Active sticks are the reason. It may look like there's room for some back and forth passes, but the way defensmen cover two on ones now a days, there's a pretty good chance he'll get his stick out and break up the pass, especially on the 2 on 1 you're refferig to.
