Lol! I won't touch Indian food normally.
I'm sure its delicious but I have a ridiculously low tolerance for Spice. I believe in India it is referred to as 'Delhi Belly.'
Indian food is deceptive and tends to just destroy me. So I just leave it alone.
However...my one great experience was in Sylvan Lake, there was this Indian family trying to blow up their gigantic inflatable floating toy. They're in the parking lot with with the foot-pump and I just called them over.
"Hey! I've got an electric air pump that plugs into the outlet in my car, bring that thing over here and I'll inflate it for you...save you the time and the work!"
So they did and all was well.
Then the Mom came over and gave us some of the food she had made and it was goddamned amazing. Delicious. We all ate lunch together and she emailed my wife her recipe. We still make it every month or so.

FENNEL...tastes like black licorice to me, and must be very carefully used lest it ruin a dish.

I used to agree to this. But then I ate Indian food in Singapore and on the way out they had fennel seeds in lieu of mints. I didn't mind it.
Then I saw Sliver talk up black licorice a while ago. I got curious and gave it a try. I don't love it, but I didn't mind it and didn't hate it as much as I used to.

I like cilantro. Many recipes that call for it just feel lacking if it's not in there.
I don't know how I'd describe it. Perhaps I'd compare it to being like, eating food that would taste better with hot sauce/spice, but there is no hot sauce/spice. It just feels like it's missing something specific.
I have a friend who eat cilantro like vegetables when doing hot pot. It's odd to me, but I don't mind it. I feel bad for those who think cilantro tastes like soap. It must really suck to have a strong flavor like that overwhelm a flavorful food in such a negative manner. Almost like when juniper overwhelms all of the other flavors in a gin for me, but all sorts of foods.

Clearly it's a add-in. No one is getting a cilantro salad. Viet sub is better with cilantro, it adds just a little side flavour that works well with it. If you added it to a whitey style thanksgiving gravy, probably gross.
If we want to talk about useless spices though, pepper should be top of the list. No matter the length of the grinder, pepper is just adding little tongue darts to the meal. Just the most useless "spice". I use it, but if it disappeared I'd be cool with it. Alfredo is probably the only place it carries its weight.

Are you trying to make the most wrong post of the day? Pepper is a fantastic spice. I couldn't imagine a thing like steak without some pepper, or a baked potato, or soups and stews, or so many other dishes.
You are wrong and should feel bad.

a classic vietnamese sub is cilantro, pickled carrots, mayo, pork coldcuts/sausage, pate and add-on jalapenos for the extra kick
the sate beef and chicken stuff is fusion

Good black licorice is one of the tastiest things I’ve ever had, but not as a vegetable flavour.

Korean food is not overrated. It is barely even "rated" by most people in Calgary/Alberta/North America.
Actual Korean cuisine (not hotdogs and fried chicken) is actually tasty as hell and some of the hottest, spiciest food i have had.

Technically all vietnamese subs are "fusion" as they use french baguettes
same with Pho, a vietnamese/colonial take on the French "Pot de Feu"

I made spaghetti carbonara last night. The freshly ground black pepper was essential. And delicious.

My mom used to over pepper everything. That was our only "spice". She'd lie to me and tell me there was no pepper in it (its just little burnt bits) but I knew it was pepper, maybe I have underlying issues or two. Fataing pepper!
It's more of an irritant than a spice. Collects in the back of your throat.
It's like adding sand to suntan lotion.

You probably added cream to the carbonara too.

Ah, nothing like long term emotional scaring from childhood to make you think so irrationally! The flying fish incident is probably one of the reasons I despise fish so much.

Could be the fenugreek. Apparently for a lot of people it causes indigestion.

Nope.
Guanciale, pecorino romano, egg, pasta, black pepper.
Carbonara without black pepper isn’t carbonara.

I was with you on the cilantro, but black pepper is basically the duct tape of spices. It's super useful!

the thing with asian cuisine is you have to pair the right sauces with the right dishes.
some people don't like anything fermented so kim chi or shrimp paste is out the window.
peanut allergy people can't have most southeast asian cuisine like thai
