Because it doesn't take away from the season and if guys get hurt they have the whole summer to recover, it's not right before the playoff push.

1. season is already over, teams aren't battling for playoff positions
2. if an injury occurs still a few months for healing and rehab before next season starts
3. if a serious injury occurs, still have free agency to help fill holes

And it is usually young guys still developing that go and the experience for them is likely a lot more helpful than Crosby/Getzlaf going to Olympics.
