For our centers, I think only jobo knows about this:

change faceoff formation with the left stick during the cutscenes. up is agressive. down is defensive. left or right -medium. if you don't press anything your default faceoff formation is based on the strategy settings you started the game with.

Anyone can change faceoff formation on the team, not just the center. And if multiple people select, last left stick selection wins. At least that is my understanding.

Oh, and aggressive formation in the offensive zone = fail. Worst formation in the game for winning a faceoff - unless you win it forward and forecheck the &$% out of the opposition.
