I don't know if yours is like mine, but 160 and 225 are low smoke and high smoke settings which intentionally swing the temp further to be able to generate more smoke from the fire box. That's by design in a pellet grill, and the food won't be affected by a +/- 20 degree swing if the average is what your set point is. Once you go over 225, like 250-550 on mine, the swing is less because its no longer smoke mode, acting like more of a oven/grill/bbq at that point.

Alright people of CP - sick deal alert here. The Napoleon LEX605RSIB is $300 off until Sunday - and comes in at $999.
With a side burner and a rotisserie burner, and a cover this is a crazy good deal for anyone looking for a higher end BBQ. Yeah, it's a made in China model, but a name like Napoleon should have spare parts available for a long time to come.
There are 3 left at the East Hills location (+ demo)
No the Lousiana grills smoker is not on sale yet.

I grabbed a 7 lb Brisket at Co-op for a decent price
Plus its local so no driving...
Anyone got a good rub recipe...
I have a few, but always open to trying something different...

My next brisket I might try splitting the flat from the point. The last packer I did the "overlapped" part was fantastic (as the point always is), but by the time that thick part is done, the uncovered side of the flat is dry.
