The reason they wouldn't be on the show is because, like someone said before, they ship their meat in from Montreal.

All the places on the show make their items in house daily. Their sauces, the corned beef they put on sandwiches etc.

That's not necessarily the case. I've seen several shows in which the diner shipped in ingredients to maintain the authenticity of the food. However, it's usually because that ingredient isn't available in the area at the same quality.

Montreal Smoked Meat can be made in-house with the same quality as can be found in Montreal so I don't think Guy would look to favourably on having it shipped in. I know that they featured a restaurant in Nebraska that a Quebecer had started that made their own Smoked Meat.

I talked to the lady at Smoky Lea's and she says she gets her meat shipped in from Montreal, but smokes it herself.
