Well considering I am from Montreal...
The farmers market cheese curds are delicious but you can find Saputo cheese curds at most grocery stores.
Although I have never done it, it's easy to make your own. Heat milk till its scalded, add lemon juice, set aside for a couple hours, strain through cheese cloth, salt, hang in cloth for a few hours, pull apart cheese into curd sized bits and enjoy. On second thought...

Hands down at the Palomino downtown. It's an actual meal. Their fries are always superb.. they do an excellent job. I had it today for lunch

Its a bit of a trek for some of you but there is a place in Airdrie called Ampfy Poutine along First Ave near the railroad tracks. Haven't had anything outside of Quebec that tastes that authentic, the smoked meat sandwiches are not bad either.

Springbank curds are merely OK. Not the same as what you’d find in Ontario (fresh from Quebec) or Quebec. They rarely squeak when you chew them.
The Taste of Quebec ones are closer, but still not as fresh as they truly need to be.

There used to be a place in Sylvan Lake called the Western Canada Fry Company I believe, we used to stop there on our way home from ice fishing and they made a bad ass Poutine. It would go home cut fries, cheese curds & gravy and repeat for 2 more layers. They got their cheese curds shipped in from Quebec as well as their gravy. For an extra $6 you could get a double bacon cheese burger with a fried egg and gravy on it.
I hope that place is still around Im drooling now.

I think baked fries are better too. Deep fried ones are too crunchy for a poutine, then again with the gravy they soften up, but baked is definitely better.
I need to find a good gravy (whether it is packed or a recipe). Anyone know a strong beef gravy recipe? I have a bunch of packs of "brown" gravy, but it isn't that good for poutine.
I know what I am doing after school tomorrow.

I used to buy a vacuum-sealed pouch of cheese curds from Safeway, and then a container of fries and Chalet Sauce from Swiss Chalet...
That was awesome, although nowhere near as good as King of Subs.
I wonder if Safeway still sells curds. I went looking for some a few years back and couldn't find any. I don't imagine they were a big seller.
Edit: On a side note... I've heard of a place in Quebec called St. Hubert, and their sauce is supposed to be better than Swiss Chalet. Is this true?

The Safeway downtown does sell cheese curds - we pick them up there all the time - I think we get them near the deli counter/bakery. I've heard that they don't squeek once they're refrigerated, so it's tough to find ones that do squeek unless you can find a dairy that sells to the public.
St. Hubert's sauce is better than Swiss Chalet. They also make a Poutine gravy mix that is AMAZING. And vegetarian to boot! We pick up St. Hubert packages at the cheese place in Crossroads Farmer's Market.

Two best places I've been are La Banquise in Montreal and Fritz in Vancouver. Not a huge fan of toppings though... Just straight fries, cheese curds and gravy!

This thread had me craving poutine in a bad way, so I got some last night at the Blind Monk in Royal Oak (NW). It was absolute garbage and they charged me, get this, $11 dollars for a single serving a cheese, gravy, and fries.

I was a fry cook at St Huberts on Macleod Tr in the 1980s. The sauce was good - more salty than the sweet Swiss Chalet sauce. What are these packages they are selling at the market?

I didn't know there were any St. Hubert's here!!!!!! I didn't think there were any outside of Quebec or Moncton, NB. Do any still exist in Alberta?

I've seen them in the little fridge cabinet next to the deli at several stores. They're expensive, though, and not all that great. Maybe I'm spoiled since I'm from Ottawa and they used to sell the great ones from Quebec at Walmart and Giant Tiger.

Similar sauces, to each their own taste. I love St Hub as a restaurant though, and I miss it in Alberta. All-you-can-eat coleslaw with any entree... mmmmm.
Anyone tried the BK poutine? I'm always so tempted when I'm there, but am so scared of disappointment.

Nope. Last one was on 32Ave NE near T&T Honda. That was a few years ago.

La Banquiese is the best in the city, imo. Especially nice since they're open 24 hours and you can get some poutine at 4am after the bar...
