So 2 questions for you AV pros!
I was on a flight to Vancouver, fairly empty, air bus 320-2 and they told us to not shift seats as the the balance of the aircraft is very important to the pilot. While I could see this being true, my bull alarm was going off. It isn't a tiny aircraft, and we could book ANY seat we wanted, what is up?
And...
On my flight home, they started their decent over Kelowna. We then flew what looked like a football throw away from the tops of the mountains, which was amazing. I haven't had this happen to me before, any idea why they would fly so low for so long?
We came out of the mountains at ForgetmeNot mountain, swerved north to the Weaselhead and then decided to loop south around DeWinton

Kavvy, as far as balance of the aircraft and the seating, your BS alarm is mostly right. It generally doesn't matter, unless it was half full and everyone was either all in the front or all in the back. As long as it is fairly random throughout the cabin it is likely fine. However the flight attendants are supposed to 'advise' the pilots, just in case it is an issue. In some cases (or at some airlines) they may just say you aren't allowed to move to avoid any potential issue.
As for the arrival,it sounds like the standard IGVEP arrival for the 35's (35 left and right, the northbound runways). It goes northwest towards the airport coming over the mountains, then turns south before joining the northbound approach. There are also altitude restrictions to put the airplanes in good shape to join the approach, and also for inbound and outbound traffic flow. Although somewhat low, it probably wasn't as low as you felt. But it is a beautiful view on a nice clear day.

Weight and balance can be a big deal. It doesn't seem like much, but with lighter loads a shift in passenger seating could create issues. Might not be crash and burn type of scenarios, just placing the aircraft unnecessarily far from the optimal center of gravity and burning a minuscule bit more gas. Not uncommon for Encore pilots here at YEG to have to shuffle a body or two around.

Ya, I thought they looked at the seat map, and positioned cargo accordingly to maintain a specific COG. Obviously one person moving won't matter but if a whole bunch do it could be an issue.

I joke though, this would be pretty cool to take part in, and a chance to see the new terminal before it opens up.

I think it was you who posted about the walk the runway a few years ago which I dragged my whole family to - it was an awesome experience!
This may be way less fun, but still neat to see for a desk jockey like me.

July stats are out and we are holding our own with some increases, plus USA transborder numbers being positive is nice after quite a few months of negative there:
