i know for sure there is major editing in the Apprentice (and other reality shows). they also create drama/stress, like moving schedules, pairing up 'enemies', changing/altering rules, etc.
most challenges are full one to two days of running around, getting things done. they have to edit that down to 30 mins (30 more for boardroom) and create drama for ratings. also, a lot of it is behind the scenes work that helpers do. the contestants just 'manage' the challenge.
example: if they need to organize a charity event, the contestants just get the people together to run the show. it is their idea, but they usually do not get their hands dirty. think of them as being upper management in a typical company. sometimes, they are tasked to 'walk the street'
