That's an easy one. Three toes! Those things are useless and you can get prosthetics and still walk. Shoes cover any problems. Fingers though, I need for playing guitar and maybe picking up piano again in the future, and typing, ...and... some ... other stuff. Toes are the easiest part of your body to lose without any deep regrets, lost ability, or impossibility to repair.

*no I did not steal this idea from the butterfly effect, I thought it up all on my own and then I remembered that stupid movie! If only they went with the original version where instead of the sappy hollywood one where he just insults his girlfriend at a BBQ so she'll never talk to him again. And I really wanted to answer the Star Trek one because I'd rather meet Spock and have him mind-meld me so I could know what it takes to be super smart and subdue my emotions...picking up the neck pinch too would be cool. And I'd secretly leave behind an emergency back-up copy of my katra (major nerd alert) in case my brain failed. All Kirk can do is show you how he meets the green ladies or maybe die a totally lame death by falling off a collapsing bridge.
