The whole thing is just so dumb. You can see Will Ferell blinking when he's pretending to be dead. It's just over the top but also hilarious.
The pacing of the movie is incredible. That and Dumb and Dumber are probably the top two movies for pulling off that pacing, where every scene is just hilarious.

Just not Toy Story 3...which is incredibly sad, and doesn't help me laugh in any way.

McGrubber somehow made it into my rotation. Didn't really get it the first time, but it grew on me in a big way.
My wife and I were in LA when it came out, and it was the movie playing at Mann's Theatre one night when we were in Hollywood and decided to check it out on a whim. I've never heard an audience laugh so hard during a movie.
Turned out it was the opening of the film, and the cast, most of the SNL cast and Lorne Michaels, and many other B-List celebrities were there too.
It also explained why they passed out celery sticks to everyone in the audience on the way in.
