I live a few blocks away from the Dog and Duck, and over the last 10 years I've tried to make it my go to pub, but I just can't do it.
Great atmosphere, but just awful food.

I'd vote Palomino for food. It is probably as close to a classic like Stubbs in Austin TX as you'll find in the city.
If you want to actually sit and talk to your friend to catch up I'd say James Joyce. Good beer, food, and still has some old British charm. Plus it's not a loud concrete box. You could do a tour starting at Palomino for yummy BBQ and then do the Steven Ave Stroll hitting up Joyce, Unicorn, and anything else for a pint in each.

To be honest I wouldn't commit to 1 place.
Do 17th and hit a bunch... or stephen/10th and hit a bunch... or Kensington and hit a bunch.

Moreover, having lived in Kensington for years until last spring, I can say without any hesitation that the amount of places to go for a casual beer and bite to eat is totally immaterial. The only reason that any of them should exist at all is to handle any overflow that might occur when Hayden Block is full and people don't want to wait for a seat there. Hayden Block is love. Hayden Block is life. Hayden Block is not a pub, still, but it is amazing.

Brasserie is not a true pub, correct, but they do have a great whisky selection. Non-members can try out Scotch Malt Whisky Society bottlings there, so it's worth mentioning for that alone.

Very true. They also make foie gras poutine with duck fat gravy. So...

You know, it's that thing when you wrap little people in tinfoil, and put them near the fireplace to melt.

As an out of towner, I'm not familiar with where the beltline is and downtown starts/ends.
Although I think I have an idea.
My input, again as an out of towner so my experiences are limited.
National, Local are nice places to go, consistent, they'll have all your standard pub fare and will have a decent selection of beer on tap (the National on 10th has a great selection).
I really liked Bottlescrew Bills. Around the World in 80 Beers is right up my alley. First patio in Calgary. A little history and tons of beers, from, as they say, all around the world.
If you want Calgary, character, and somewhere they haven't been before Bottlescrew Bills.
If you want a franchise atmosphere pub (not in a bad way) then National or Local.
Alas, I can't really speak to others. I've been to a few on 17th Ave, but I couldn't tell you their names. One I liked that had a nice patio with your standard picnic tables outside.

On a hipster scale of 1 to 10, I come in at about a 1.13. I also fully acknowledge that its a bit of a hipster hang out.
But Im a big fan of the Hop in Brew Pub.

I never really got why the Ship was so popular other than it was popular so people kept going there. Every time I've ever been there it smelled like an armpit.

The only reason to go to the ship is if it’s a sunny afternoon and you have a spot on the patio. Who the hell would ever want to hang out inside that place?
