the nearby food on its own is worth staying here for. I could live on Da Crack burritos and acai bowls from Little Fish for the rest of time.

^LOL, I know. It's nuts. It's significantly more expensive than when we went there. The renovations sparked a huge price increase.
That being said, Princeville is a nice spot with some cheaper hotel options. I'd still go there if you're planning on going to Kauai.

sorry I forgot it's your anniversary, here's a package that might work better. 7 nights in January at their higher end suite, I selected the flexible cancellation rate for you which is a bit more, but it still has the 20% off promo applied.
the $45 per night resort fee still applies though, not sure if that's a dealbreaker

You could do that. I like to fly from Calgary through Seattle and then straight through to Lihue. You clear customs in Calgary so all you have to do in Lihue is pick up your luggage and go.
Returning, it is a domestic flight from Lihue to Seattle so no need to clear customs until you are back home in Calgary.
You could go through LAX or San Francisco as well, I just find Seattle less busy.

Maui is a good mix, Kauai if you want to spend time exploring in your car but not a ton of "Touristy" stuff to do.
Oahu for 3 days is also a must but any longer it gets old. Kind of like Vegas
I'd island hop via Hawaiian airlines and split your trip between Oahu and Maui

fyp. at best you could maybe apply this to Honolulu, but if we're talking about the whole island, there's activities, sites and scenery to keep things fun for at least a week.

I don't disagree. I've been to the island 10+ times but I think it's best to split with Maui just to mix it up. Island to island flights are pretty cheap.
