So it was pretty cool going to a Hammam in Turkey, and your question made me look up whether we have a Turkish bath style spa in Calgary.
I went to the hamman in Istanbul which was a shot location for one of the Daniel Craig Bond films. It was far from being a pampering experience but was quite the hoot anyway. Lying practically naked on a marble slab while being pummeled by a massive Turkish dude is something everyone should experience at least once in their life!

I just saw a video where someone made their own Tanto sword from a skate blade and made the handle and sheath from a hockey stick. Weird... but also really cool if it was a gift.

I managed to subtly work in asking my wife if she'd be interested in something like this. She responded so enthusiastically that it's now going to be her Christmas present this year.

They have terrarium classes at Plant in Inglewood. Never been personally, but my daughter and her boyfriend went and really enjoyed it.
My wife and I did a Paint and Sip down at Vinhgo Paint and Sip...I think that's what it's called. You paint a picture and drink some wine, there's an instructor that you follow along with. But if you're artistic to begin with you don't have to.
We did the gelato making thing but at Fiasco Gelato.
We were recently at the Saskatoon Farm Christmas Market and I saw a booth for caving tours in Banff or Canmore. I grabbed a card, I'll give better info later.
Knifewear in Inglewood offers cooking classes every so often. It's quite pricy but you do get a knife out of the deal.

At some point I hope SAIT resumes their cooking classes, but I kind of feel like they’re not going to. They did offer an awesome selection of one-off classes.

If you want something active, I'll put in a shameless plug for the trapeze rig I work at - Rocky Mountain Flying Trapeze. You can do a beginner class together and learn some cool tricks. It can definitely push you out of your comfort zone, especially if you're afraid of heights. Downside, is it's June-September only.
There's handful of very good Broadway musicals that come through the Jubilee Auditorium every year. I bought my wife and daughter tickets for Mean Girls in January. You can usually see a top notch touring production for not a ton of $$.
