How do you deal with one player telling everyone else what to do?
I think that it depends on who you're paying with. I played Pandemic for the first time with my two older boys last weekend. My 10 year old made some questionable moves as might be expected given his age but we just let him make his own decisions. That would be tough for the alpha males out there but so what really?
We lost pretty badly but thought the game was awesome too.

I used to play a ton of board games growing up as my dad was an avid wargamer and board game player. Played lots of Avalon Hill games amongst others.
Finally got back into playing in a big way after 30 years of video gaming killed the hobby for me. The ipad brought me back. Playing Ticket to Ride peaked my interest and I ended up buying the whole series which the family all love.
I've gone a little nuts since Christmas and have picked up multiple games.
Really enjoyed playing Airlines Europe, Alhambra, Dominion and Dom Seaside, TTR, Pandemic, Flashpoint, Thurn & Taxis, St. Petersburg, For Sale and others.
Got to play Alhambra for the first time tonight. Fun easy game that my daughter (8 yrs) really enjoyed. picked up the Big Box version so there seems like lots more to it once we have the base game down.
Don't know why I quit playing as its just an awesome thing to do with my family. It helps that three of my kids are old enough to play now but even my wife will play, and enjoy, TTR

I don't know if you can have multiple games going at the same time, although that video says you can, but if I leave the game I can tap on resume to go back to my game, so the progress isn't lost.
Winner had all kinds of plasma missiles and wiped out all other ships before they could shoot. I could never build much, so tried to influence many hexes, and built two monoliths at the end. Best tech for me was to research -1 shields, +2 computers and advanced economy. Two star bases defended important hex until the last round. 13 points from battle, mostly with ancients. Controlled 9 hexes at the end.

Me 27 (won tie-breaker with most resources)

The opponents kept killing each other in the middle, and I never engaged them once. I influenced 10 hexes, and had lots of money with advanced economy. One monolith. 5 VP from battles with ancients. 2 VP from diplomacy. Three techs in top two tracks. Was collecting 28 money, 8 science, 15 materials at the end.

I don't understand how to deal with the plasma cannons. They load up on cannons and you can't fight them. Do you just avoid them for the whole game?
I haven't tried building a monolith yet. Maybe I need to figure out what they do.
I think it's usually a trade off for other things. If they are loading up on cannons, they probably don't have much for targeting. You could consider getting the upgrades that reduce the opponent's chance to hit and hope they don't roll all 6s
I just played a game last night when I picked up the missiles and a gluon computer. It wasn't even fair. Loaded up some starbases in the centre and nobody dared come near me.
We played an all alien game, and I had the Progress, so I picked up Science pretty quickly. I really don't know what someone could do to counter what I had going on.
The one time I had to go up against the missiles I had a shield, but it didn't do a thing. I may have just been unlucky.
I have won two out of three, and I never have attacked the other players.
Last victory was a research win. You get VPs for advancing each tech track. I usually seem to have 1 or 2 monoliths. My ships only need to be good enough to kill the ancients.
