This was an upwards demotion IMO. He was told "you're not GM and maybe we will will keep you on, but you have to interview".

It happens a lot more than you think. People feel slighted for being passed over for promotions often look for new opportunities but typically they won’t up and quit immediately but they will begin the search for a new job and quit once they find something.
I have seen it multiple times in the companies I have worked for.

That's the thing. Mellanby didn't wait to find something. He threw away his salary for the rest of this season, or however long his contract has to run, without having another job lined up… because Habs.

Oh, were the full terms of Mellanby’s departure disclosed?
Is it not plausible that they say ‘where do we go from here?’, discuss what the rest of the year looks like, and Habs can pay Mellanby out while allowing him the optics of leaving at least somewhat of his own volition?

It's reported that he quit. Usually when you do that, you don't get paid and you lose any claim to severance pay or other contractual benefits.
