I love my cheese, but the best one I ever had I've only had once. Bought two punds of it in Niagara on the Lake a couple of years ago and haven't found it out here since.

It's called Eweda, an aged sheep's milk gouda. It is the most awesome cheese ever with hard fruits or ice-wine.

Other then that, medium/old cheddar. Tried some monteray jack with jalapenos in it today, was pretty good.

Aged Long Clawson Stilton, or some cornish yarg and a good apple.

And call me a bigot but nothing out of the US strikes me a cheese, dairy and petrochemical byproduct would be a better description.
