Personally I don't marinade my steaks. I prefer to taste the beef as it is.

All I do is get the BBQ searing hot, almost red hot. Sear the steak on each side for less than 30 seconds, sealing in those mmm mmm tasty juices. Turn the heat down a notch and cook for 3 minutes a side. When I flip it, I pour some beer overtop. That right there makes the steak.

Serve with large baked potato with trimmings and tons of sour cream and you got yourself my favorite meal.

Read what I wrote, try it, then if you have any feedback, say so. Ken addressed the loss of juice issue.

I have been doing this for three decades. That is a long time for trial and error.

As for the "crappy BBQ" comment.. puuuleeeease. I can cook as good a steak on a firepit at a campground as I could on any BBQ you put forward. Perhaps even better depending on the wood in the firepit.

where is the best place to buy a good steak? I buy mine from safeway. Something thick with some fat in it. I just put olive oil, course salt and pepper. Man it's goooood.I bbq'ed on sunday in calgary. The weather was nice and I had a craving for a big ass steak.

For top of the line steaks, I never marinate, might use rubs or spices, but dont marinate.

Now on the other hand, if you are doing a flank steak, this works well:

1/2 cup soya sauce
1/4 cup oil
1 tsp ginger powder
1 tsp mustard powder
1 tsp pepper
1 tsp garlic powder or 2 minced cloves of garlic
2 TBsp dark molasses

Put in a container that you can cover and shake. Refrigerate, shaking or turning steak every hour or so. I like to marinate 6 to 8 hours, so start early in the day, barbecue for your evening meal. Flank steak should never be cooked till well done, medium at most. Let sit 5 to 10 minutes, then slice thinly across the grain.

I've never seen Maldon Sea Salt at Costco. Never looked for it there though.

Only flip once. Turn at a 45 deg angle for proper grill marks. Never, ever poke holes in it. Let it rest for 5 mins when it's off the grill.

To check how a steak is cooking;

Touch your index finger to you thumb (Don't flex or squeeze) and poke the fleshy part of your palm just below your thumb. This is how a rare steak feels.

Middle finger to thumb is medium.

Ring finger is well.

If anyone knows how to make those Keg oinion fritter things.......
