I have some moose & elk, I'd like to Jerky. Butcher recommendations? I was thinking Rocky's on Edmonton trail.

Don't go to Rocky's the shop is disgusting, also it burnt down this fall, so I'm not sure it is even operational.
That aside, I brought some elk to him 2 years ago and he lost it, like physically lost about 60lbs of Elk Meat. That same year, my friend got deer sausage made and we are pretty sure Rocky was mixing batches as there was some obvious elk meat and hair in the meat which wasn't from his batch.
I go to Better Butcher on Heritage, much cleaner, they do all the work out in the open.

I hunted with my dad when I was a kid and enjoyed it for the most part. When it came time to shoot for myself I found myself woefully inadequate and ended up causing more suffering than I was willing to allow. Haven't been since my late teens.
I've been out a few times to try and get a late season elk. No luck yet.
Going out again on Friday for close of season, so hopefully the last day is the day we get one.
Elk are tough this year. I've been hitting all my usual spots and they're just not around...legal bulls are about as common as sasquatches.
I'm going out tomorrow for one last shot at it, but may have to settle for a couple of deer this year.

Used Ryan Meats for some WT sausage 2 years ago. They turned out awesome.
Went up to our usual area near Debolt this year with a Moose tag. Saw 19/20 cows or calves, just the single bull. Just no luck with the Bullwinkle. Saw a beauty bull elk around 630am, but couldnt quite get ourselves set for a decent shot when it finally got light enough out.

My brother and I used to go duck hunting with our dad when were in our early teens. We'd stay in Brooks and go hunting on a nearby Hutterite colony.
My dad wanted to teach us both how to shoot but I couldn't come to grips with the killing part. After a few trips and attempts by my dad to teach me I stopped going and let my brother and dad continue.

Been out looking for pheasants a couple of times this year. Key word is looking, without a dog the little bastards are nearly impossible to find.
There is a pheasant farm up near Crossfield my Dad and I checked out, they will release a bunch of birds in their fields in the morning and let you hunt them in the afternoon. It feels kinda like cheating, but not really since at least you know they're out there, and you still have to find and shoot the buggers.
Got a mule doe and a white tale buck 3 weeks ago. Have a tag for black bear, but never saw any. Went out 3 times looking for one. Saw lots of sign, but no luck.
Make your own jerky & sausage, it's very rewarding.
I filled my Mule deer tag, still have one for a moose.
I have Friday off, last day of the season but don't think I'll go out, haven't even seen a moose all season.

Braised and sauced its good. Its similar to any more gamey meat like sheep or goat. Ive only had it in stews. I suspect you could make really good curry with it.
