Hypothetically, If I sell hay, get paid cash, and give a person a receipt. How do I declare that money without having to deposit it?

So you want to declare the cash but not put it in the bank? On your Tax Return just include it under a Farming schedule.

Well I'd rather not declare the cash, but I gave a recipts, which would imply that I should declare the cash so the CRA doesnt try to #### my ass

Theres lots of ways to do it in order to make your life easier. It depends on how much it is and a myriad of other factors in terms of selling 'hay.'
