If you haven't rooted phones before be sure to read a lot before. I started with a Captivate and it was fairly easy (got some help from FlameOn I believe) but a little nerve racking at first. I soft bricked that phone numerous times but always had a way out with Odin. Sounds like the S3 is a lot like the Captivate. Once rooted and a custom recovery is added flashing ROMs and kernels is a breeze.
I always suggest a backup with the toolkit and track down a stock image as well just incase.
And be sure the files you get are for your model of phone.

By far the most popular is AOKP, you really can't go wrong with it. For me I found it tiny bit buggy and a tad laggy.
The one that I am sticking with for the forseeable future is Liquidsmooth. IMO best combination of features, smoothness and speed.

No issues installing on Canadian GS3's?
I know ROM's and such as listed on XDA, but I have a Rogers GS3. Would like links to ensure that I do this right. I'm not even rooted. I would like to flash this ROM, but need to ensure things go smoothly. Can someone help with links? PM if need be. Any help would be great with links to where to go and what to do first, second, etc. Thanks to anyone who can help!

For any Canadian phones follow the AT&T threads. Most threads should specifically say they support the Canadian variants.
Start here with the unified toolkit.

Thanks. The toolkit sounds quite helpful. Now I just need to find instructions for installing Liquidsmooth. Do I need to flash anything else before hand? I keep hearing flashing a kernel, etc. I just need idiot proof instructions if anyone can help, not just a point to the XDA forum for the GS3.

You need to Root and have Clockword Recovery Mod (or another similar app) installed.
Kernels is optional. I have no issues with Liquidsmooth kernel.

XDA will provide all the step by step instructions you need.
Start with the toolkit to root and flash a custom recovery. I prefer TWRP but either will do. I recommend a full back up just in case. Next, just go to the corresponding thread of the ROM you want and follow the instructions. It is all in there.
The more you know the better as it is possible to brick your phone, unlikely but possible.

And see, this is why I have decided to simply go back to stock. Liquidsmooth finally decided to boot and show itself after 3 tries. The first two times, it just sat at the boot screen and never loaded.
Then I decided to load AOKP. Everything seemed fine, but my LED notifications no longer work at all. Numerous force closes too. I'm just going back to stock. It's not as shiny, but it works.

^^ Stock isn't really all that bad if you just use TB to remove some of the bloatware.

Well, as of JB, it's really easy to simply disable any bloatware so it doesn't run or even show up anymore either. I do that first thing.
I actually loaded a stock rom that is already rooted so I'm good to go now. Oh and the LED works again...

Running Task 4.2.2 and have absolutely no issues. There were some issues when he switched over to the new kernel but last couple releases have been perfect. Don't see how it can improve much.

Try Slim. Fast and stable. They do good work and really put time into their code. AOKP or AOKP based ROM's are buggy. They seemed more focused on neat gadgets and tweaks than stable code.

I also vote for Slim.
I had one issue where my phone rebooted into ClockWorkMod Recovery, but otherwise it has given me zero issues. Running the latest updates, and it works great.
USB fastcharge is worth it too.
