Mozzarella di Bufala Campana....ie, Buffalo Mozarella from the the Campana region of Italy. I don't know why it's different or what they do to it, but I think I ate about 5 pounds of this stuff when I was in the region, and still couldn't get enough. It's magical.

For straight up eating, you really can't beat a good brie. Superstore brings in the Président Brie from France around Christmas time, and they're fantastic.
Honourable mentions to (not bries) Boursin, Rondelé, and St. Agur if you can find it.
For cheese as part of a meal? Raclette, no contest.

Wisconsin aged extra sharp cheddar. Has to be Wisconsin tho...completely different from any other I have tasted.
love the Jalapeno jack stuff as well..and asiago in certain dishes.
I dont understand the love for Brie tho....stuff is just...meh.

Cracker Barrel cheddar slices are on sale at costco this week FYI.
Any cheese that can be graded and mixed with mac and cheese is my fav.

While we are on the topic of cheese, does anyone else get a warm face and scalp after eating older and/or stronger cheeses? I'm guessing that it is some sort of an allergy, but it isn't enough to keep me away from cheese. Actually I kind of like the sensation as it is a byproduct of something awesome happening inside of my mouth.

My definite favourite is chevre noir - it's an aged goat cheddar...very tasty. You can grab it at Janice Beaton and they also have it at Divino
