Raw....
I will eat and like almost every veggie out there when it is raw.... when you start cooking them is when I start to get more picky as to the ones I will eat.

Asparagus has gotta be number one for me. Between lunches and suppers I must eat it six times a week.
Sweet potatoes, beets, corn, peas, baby carrots, raw spinach. Hmmm, maybe I like veggies more than I thought!

Anise for the win. It's like licorice-flavoured celery!!
I also love peppers, butternut and acorn squash, beets, and peas.
Only vegetable I really strongly dislike is swiss chard.

Bok Choy is awesome in stir-fries. You get the crunchy stalk part and a nice tasting green leaf part.
Baby Bok Choy and baby Shanghai Bok Choy are are really good too.
Daikon Radish also. Raw, in salads or cooked in stir frys and soups.
