Opinions are like bellybuttons, everyone has one, and they're about as useful.
Let me put it another way. You can either abide by the guidelines and post here, or you can go post somewhere else.
There are many reasons for the rule being in place, and your opinion about it is about as high on the list as your bellybutton.

Circumventing is skirting the letter of the law to violate the intent of the law.
If asterisks are clearly a substitute for profanity to any reasonable person, then what's the difference between posting the profanity and posting the asterisks? Both communicate the intended word, so there is no difference.

Good for them. Pornography is legal and acceptable in some circumstances too, why don't you go bug the Sun and the Herald about not being able to put pornography in your letter to the editor?
Different places have different rules for different reasons. Maybe what seems over the top to you is simply your lack of understanding about why things are the way they are?
See, if I go to my friend's house and try to play my tuba, and he's all like "Dude, you can't play your tuba here", and I'm like "dude your rules are way over the top, I can play my tuba over at the Sun and the Herald", he's probably going to react negatively to my complaining. If however I ask "Why can't I play my tuba" then he can explain how if he lets some people play their tubas it tends to result in more tubas, then violins, then soon entire orchestras playing the score to Inception.. and that the advertisers at his house had certain rules about orchestras not being allowed otherwise they'll pull their advertising and there wouldn't be anyone to pay for the cool parties at the house.. and other reasons for not letting me play my tuba, then we've had a mature exchange of ideas resulting in some understanding, and then we could fill the tuba with beer and get hammered.
