I did a sushi making course with about 10 other people at sakana grill downtown. It was awesome. They teach you how roll it all etc...you end up making a giant platter and you get to take it home. It was like $50 or something per person, but, you get to keep your mat and the giant platter of sushi.

Also, some safeway stores have sushi grade salmon at their meat counter. I've bought it there quite a few times and just cut it up and eat it just like that. I'm also obsessed with raw salmon....

The expertise in making sushi comes from the final look of the product. The perfectly circluar roll, the percise layout of the ingredients inside the roll, etc. That's what takes forever and a day to perfect, in fact, it takes a long time to get something that looks even close to a professional roll.

BUT, that being said, at home, focus on the rice. You need to use sticky rice, just go to a grocery store and buy rice for sushi, it's pretty easy to find. Cooking rice in general is a fine art. It needs to be rinsed, cooked, and timed perfectly. That way the stickiness is jsut right, not too sticky and glumpy, and not the kind that falls apart. Also the vinegar will give the right taste. After figuring that out, buy the rest of the ingredients and slap it together as you please. Use plastic wrap on the counter, put a layer of rice, flatten it, throw in some ingredients, and roll it up the best you can, squeeze it to firm it up and chuck it in the fridge to let it set up.

The kits are fun, but just add more complication to the process, enjoy figuring it out, as long as the rice is cooked properly, no matter what it looks like, it'll taste like sushi! Don't get freaked about how hard it is to make, because like I said at the beginning, it's only the physical appearance that is the hard part to achieve. It's not like cooking a steak, where it's more important to cook it right and less important to have it look right, know what I mean? (you mess up the cooking part of a steak and no matter what it looks like, it'll always be over / under done, sushi is opposite, crap look, still mighty tasty).

This is spot on as far as the Calgary sushi scene goes. I'll throw in a recommendation for Sushi Bar Zipang in Bridgeland, also.

yeah, sushi in Van is unbelievably cheep and great. I've considered trying to make it myself, but considering how cheep and good it is 1 block from my house, there's just no point.

My favorite $8 meal
-edemame (sp?)
-seaweed salad
-cali roll
-dynamite roll
-avocado roll
-prawn udon
-green tea
-Pockey sticks to go

No, Kishu star is very cheep too with their 50% off after 7PM but I don't really like their sushi too much.
The place I go is Hitoe Sushi further West on 4th.

This man speaks the truth.

For decent sushi here, it would cost about $75 for two. My wife and I had sushi in Vancouver for $55 including tip, and we were beyond full.
