First of all, he cant be kicked as he's considered a downed opponent by virtue of his "knee" being in contact with the mat. As stated above, it's pretty difficult to strike at that level, so you're left with very little in terms of attacking options.
Second, getting in any sort of take down range against this guy is pure stupidity. He has a pretty impressive wrestling background, so his ability to take down fully able bodied individuals is there. On top of that he has been pretty successful in submission fighting competitions. He's actually won a number of submission matches by a variety of holds, which is astounding considering his lack of limbs.
Is he a legitimate MMA fighter? Of course not, but if he's put in a cage with a guy who doesn't know what he's doing I wouldn't be surprised to see him grab a submission win.
