I would recommend just about any of the Cirque shows.  Also saw Wayne Brady when I was down there last year, and his show was pretty good.  And even though you might not be into the nightclub scene, going to a club in Vegas is always entertaining to people watch.  Ghostbar on top of the Palms Casino is interesting. 
  
If you play in any of the $50 buyin tourneys around town you shouldn't embarrass yourself too badly.  If you know the basics of poker, than a tournament is not too bad.  Tourneys are definitely the way to go - you cannot lose more than what you buy in for, and if you play tight agressive, you can play for hours.  Pick up a Cardplayer or Bluff Magazine while you are there, and it will list the tournaments you can buy into.  Your wife might also be interested in playing.
